DTI and FBCD participated in the Food Festival in Aarhus on 4 September, hosting a stand to engage stakeholders and present BRILIAN project results to local citizens, professionals, food students, and other visitors.
The festival attracted more than 27,000 visitors and around 250 companies, associations, and food producers from Aarhus and across Denmark. It brought together chefs, local producers, small businesses, and food enthusiasts from across the country.
Despite the cold and rainy weather, attendance remained high. The BRILIAN project generated considerable interest, leading to many engaging discussions with visitors. Participants were also invited to complete a short questionnaire on their perceptions of alternative proteins and the development of local value chains.
As a thank you for their participation, visitors were offered a traditional Danish flødebolle made with aquafaba, demonstrating how food side streams can be transformed into innovative and appealing products.
